I share your opinion as for the use of organic acids to generate a progressive reduction of the stomach pH, favoring this way the digestion through the pepsina. Nevertheless, it only is not necessary to think of the sour butírico. Other organic acids as it is the case of the sour fórmico, lactic, propionico, etc, they will carry out this same function.

Another topic is that of the butirato of sodium like mejorador of the supeficie of intestinal absorption (Galfi). This function won't be really carried out by an acid and he/she will need the performance of a salt like it is this butirato of sodium.
